Bacon and Avocado Salad
Quick, easy, delicious and fairly good for you. This recipe makes enough for one light meal or a starter for two.
1 Small Avocado
Cut the bacon rashers in to squares about 1 inch to the side and fry until well cooked and quite crispy.
While the bacon is frying, peel and dice the avocado and cucumber and cut the tomato into small sections. Add the bacon to the salad mixture and toss.
Take 1 teaspoon of tomato puree, 1 teaspoon of mayonnaise, 2 teaspoons of olive oil and mix together, add a few finely chopped mint leaves and a good twist of freshly ground black pepper. Add the sauce to the salad and stir.
Serve with lightly toasted ciabatta bread.
